When it starts to get a little cooler, it’s time to bring out all the winter meals. There is no better way to warm up your winter, and keep the cold weather at bay, than with some really hearty wholesome beef dishes. How to cook the perfect roast
1. Preheat the oven (Use our Go to Meat Guide below)
2. Brush you beef roast lightly with oil and season. Place the roast on a rack in the roasting dish.
3. Check if its ready just before the estimated cooking time is up (You need to make sure it doesn’t overcook). Use tongs to test the roast doneness, gently prod or squeeze it, rare is soft when pressed, medium is springy and well done is very firm.
4. All your roast to rest before serving (this is as important as the cooking itself). Cover it loosely with foil and stand it in a warm place for 15 minutes before carving.

Rib Eye/Scotch Fillet/Rump Fillet/Tenderloin – Temp 200 oc, Rare – 20 Mins, Medium – 25 Mins, Well Done – 30 Mins
Standing Rib Roast / Bolar Blade – Temp – 160 oc, Rare – 25 Mins, Medium – 30 Mins, Well done – 35 Mins
