Ingredients

  • 300g Hobnobs or other crunchy biscuits
  • 100g butter, melted
  • 200g dark chocolate, chopped
  • 3 bananas peeled and sliced
  • 2 tsp lemon juice
  • 300 ml double cream
  • 1 tsp vanilla paste
  • 4 tbs (1 unit) Baileys Original Irish cream
  • 400ml jar Dulce de leche caramel sauce

Instructions

  1. Crush the biscuits in a food processor until coarse crumbs form. Pour in the melted butter and process again.  Divide the mixture between 6 small (8-10cm) metal tart tins with removable bases.  Press hard into each one, Put in fridge for 10 minutes.
  2. Melt half the chocolate in the microwave for 30 seconds on medium (50 per cent) power at a time, stirring with a metal spoon, until completely melted. Alternatively, melt it in a glass bowl suspended above a pot of gently simmering water.  When melted, brush the inside of each case with the chocolate and put in the fridge for a further 10 minutes.
  3. Toss the banana slices with the lemon juice. In a bowl, whisk the cream, vanilla paste and Baileys Original Irish cream until soft peaks form.
  4. Remove the tarts from the fridge. Gently remove tarts from the metal cases.  Spoon 2 tbs of the caramel sauce into each one, top with half the slices of bananas and dollop 2-3 tbs of the cream, over each.  Top tarts with the remaining banana and grate the remaining chocolate over the tarts to serve.

Notes

Baileys Mudslide :- Fill a blender with a cup of ice. Add 60 ml Baileys Original Irish Cream and 15 ml Smirnoff red-label vodka and blend. Before pouring, swirl chocolate sauce around glass. Garnish with chocolate flakes
